We’re always looking to align ourselves with like-minded and passionate people; we’d been talking with Suhaimi and the team at Dutch Colony for a while, and it seemed like the right time for us to collaborate. Suhaimi and Dutch Colony was an obvious partner for us, knowing our coffee well from our intial introduction of the FST coffees into Singapore in 2011 and working with it intimately, roasting for baristas in their National Championships ever since.

Around the same time, on a cold morning in New York, Michal from Standart and I caught up over a cup of coffee and we chatted about the magazine’s cool samples for subscribers. We agreed that we would love to share some of our best and most interesting Geshas with more people who love coffee.

The Roaster: Dutch Colony Coffee Roasters Singapore

Dutch Colony was founded in 2012 with the vision of bringing the specialty coffee experience, the bean, the space, the process and the education components to the customers in Singapore. 

Our vision is to bring the unique bean-to-cup experience that suit your taste buds through carefully sourced specialty-grade coffee beans from all over the world and to roast them fresh in small-batches passionately, that allow us to control the process every step of the way before that cup of coffee, with your chosen extraction method, is served by a professional barista.

In being given the opportunity (and trust) to roast these gems of a coffee, we definitely felt a load on our shoulders. Having in our hands a Gesha varietal from what is probably one of the best coffee farms in Panama and roasting it to be savoured by readers and subscribers of Standart, that we all know have discerning palates - is a responsibility that we want to honour with a delivery that should be executed well, from start to finish.

As a Company, we were thankful that coffees from FST are no longer new to us and some of the roasting profiles from past years have come to serve our purpose well. After a series of profiling sessions with our trusted Ikawa, we ran a public cupping exercise and invited a good number of cuppers to partake in the slurping exercise. Notes were taken and discussed and we narrowed down to a few roasting profiles.

The rest, as they say, is history!
